Happy Valentine’s Day!  I know today’s the day because I made the mistake of going to Wal-Mart…crazy.  Also, the pink tint on my fingers from making cookies for my daughters’ class is a tell-tale sign.  As is the brand-new copy of Pioneer Woman’s cookbook that I found with two Cadbury Fruit & Nut bars in the driver’s seat of my car this morning.  Yep.  My husband knew it was Valentine’s Day, too…and he did a much better job remembering than I did.  Which brings me to this post….

I am married to a complete chocolate lover.  He’ll eat other sweet things but only in the absence of the good stuff…or to avoid hurting someone else’s feelings…usually mine…or his mother’s.  Anyway….today, because I love him and because I’ve been to the doctor twice since Friday with our baby, I made these very simple, last-minute chocolate treats.  Yes, there’s a better name for them.  I think it’s quite simply “Oreos Dipped in Chocolate,” but how boring is that?  Not the chocolate, the name.  The good thing is my husband won’t care what we call them…they’re chocolate dipped in chocolate.  Need I say more?

To make them I used:  about 20 Oreos, one container of Baker’s Melting Chocolate and one bag of Ghirardelli White Chocolate Chips….but you can use whatever chocolate you like best.  Just melt it and dunk the Oreos.  You can let them dry on wax paper, tin foil or (as I did) a wire wrack over a baking sheet to catch the excess.

Look, you always knew Oreos were for dunking…just forget the milk and grab the chocolate!  It couldn’t get easier.  I was even able to make these today while my baby ate lunch.  Love it!

Enjoy!
