Quick and Easy Meatballs and Sauce

I made this tonight on sort of a whim, and the recipe turned out so well I thought I’d share it with you.  It was quick and easy and could be used in several different ways…I served them with sauce over spaghetti squash.

Quick and Easy Meatballs and Sauce

1lb. extra lean ground beef (I imagine ground turkey would work as well.)

Crumbs of 3 slices whole wheat bread

1/2 medium onion, finely chopped

1 egg

Spaghetti Sauce

Preheat oven to 375.  Chop onion. (I used my small food processor so that the onions were nearly pureed.)  Make crumbs out of bread (Note to self:  make crumbs before chopping onions next time…then you can the food processor.  Duh!).  Add ground beef and mix thoroughly.  Beat egg with a fork then add to meat mixture.  Form into balls and place on baking sheet.

Heat skillet and brown meatballs then return them to the baking sheet.

When all are slightly browned, place in oven and bake 10-15 minutes until done.  Return to skillet and pour sauce over.  Bring to a boil then reduce heat and simmer 5-10 minutes.

Serve over pasta, spaghetti squash, bread…whatever!  Oh, and sprinkle a little parmesan cheese on top.  Always sprinkle a little parmesan cheese on top.

A note about sauce:  I would say almost always use homemade, but the theme for this dish was quick and easy…so I used spaghetti sauce in a jar.  I don’t usually like jarred sauce, but I tried Bertolli Organic Olive Oil, Basil and Garlic Sauce.  It was surprisingly good.  I’ll probably use it again…which means I’m either getting lazy or getting smart!
