Okay, I can’t take credit for this tip…..I learned it over lunch at good friend’s house once as I was enjoying her delicious vegetable soup. It’s simple. When making vegetable soup, use V8 juice instead of tomato sauce. You up the veggie ante, and your kids don’t even know it!
Here’s how I make my soup:
First, chop onions and then saute them in about a tablespoon of olive oil. (You can throw in a minced clove of garlic, too, if you like that sort of thing!) Add a pound of ground beef or turkey and cook thoroughly. Drain.
Pour the V8 juice into the pot with the meat and onions. (I poured the whole bottle.) Add a bag of frozen mixed veggies, chopped potatoes, baby lima beans, etc. (Whatever you like best!) Add enough water to make the thickness you like best. Season with salt and pepper. Bring to a boil then reduce to a simmer until veggies are tender or you’re ready to eat! If you need to add more water at any point, go ahead and do so.
