It’s really no secret that I love coffee. And chocolate. And cookies. I like caramel, too.
Put them all together and you get these Salted Caramel Mocha Cookies, which are a tasty way to satisfy all your cravings. These salted caramel mocha cookies are sweet and salty and soft and chewy with a little bit of crunch on the outside. The coffee flavor is mild so people who don’t like coffee (there are some! My husband is one of them.) won’t really notice. If you prefer, you can always make the coffee flavor stronger by adding some espresso powder or coffee extract.
These salted caramel mocha cookies are perfect for an afternoon snack with your long-awaited latte. (What? Am I the only one who can’t wait for nap time so I can have my coffee in the quiet?)
The good news is these are really easy to make. You can have them in the oven in just a few minutes, which also makes them a great treat to offer unexpected guests. I have a friend who sometimes texts that she’s stopping by on her way home from work. I love that I can offer her warm cookies not long after she arrives. Cookies, coffee and conversation. It’s kind of our thing.
What You Need to Make Salted Caramel Mocha Cookies
- 1 1/4 cups firmly packed brown sugar
- 3/4 cup Butter Flavor Crisco
- 2 tablespoons cold coffee
- 1 tablespoon pure vanilla extract
- 1 large egg
- 1 1/2 cups all purpose flour
- 1 teaspoon salt
- 3/4 teaspoon baking powder
- 1/4 cup Cocoa Powder
- 3/4 cup Chocolate Chips
- 3/4 cup Salted Caramel Chips
How to Make Salted Caramel Mocha Cookies
Preheat your oven to 350.
Cream shortening and brown sugar until combined. Add coffee, vanilla and egg.
(Obviously, I decided to skip that first step and just combine all the ingredients I just mentioned. I must have been in a rush, but the good news is the cookies turned out just as well as usual!)
Beat at medium speed in your stand mixer with the paddle attachment until fluffy then add dry ingredients and mix well.
Fold in chocolate chips and salted caramel chips.
Spoon onto ungreased baking sheet and bake for 8 to 10 minutes or until the desired amount of crispness is achieved. (I use a cookie scoop so that my cookies end up pretty uniform in size and shape.)
Remove from pan and let cool on rack.
