Nothing tastes as much like spring and summer as this Fresh Strawberry Pie!  The recipe is simple and sweet and so delicious!

Fresh Strawberry Pie Recipe | Our Favorite Strawberry Pie

When March rolls around, there’s one thing we wait for with more excitement than blue skies:  Louisiana Strawberries.

Y’all.

They are the biggest, sweetest strawberries you will ever taste.  Louisiana strawberries make grocery store berries taste like cardboard in comparison.

Honestly.

We buy them by the flats around here.  They are that good.

My mom just happened to be visiting when they arrived this year so the first thing most of my sisters said when they walked in and saw the flat of strawberries she had bought on her way to town was, “Where’s the pie?”

You know how there are some recipes you just automatically associate with some people?  Well, as many wonderful things as my mom makes, this fresh strawberry pie recipe ranks right up there with all the best things she bakes.  Let me list our favorites:

  • Pumpkin Cake with the most delicious filling you have ever tasted
  • Fresh Peach Cake (which we start looking for the moment Georgia peaches come to town)
  • White Fruit Cake that tastes NOTHING like what you see stocked up at the supermarket in December
  • And this pie.

There are a million other things that my mom makes well, but those four things are her signature desserts, the ones she makes when she has her girls to feed.  Our favorites.  When she visited last week, she made a triple batch.  3 pies so that one of my sisters could take one home, I could put one in a gluten-free pie crust for one of the twins, and the rest of us could enjoy one as well!  (Okay, we ate the one with the gluten-free crust, too.  No five year old needs her own pie, right?)

She stuck around long enough to be sure she got her fair share of the glaze.  We love the glaze.

Simple Recipe with Stunning Results

The beauty of this recipe is its simplicity.  And the berries.  They really shine through.  Top your piece with a dollop of whipped cream if you like.  We didn’t have any, but no one complained!

To make this pie, all you need is the following six simple ingredients if you use a store-bought pie crust:

  • 1 cup sugar
  • 1 cup water
  • 3 tablespoons cornstarch
  • 3 tablespoons strawberry Jello
  • 2 pints fresh strawberries
  • 9″ baked pie shell

How to Make a Fresh Strawberry Pie

First, bake your pie shell.  Be sure to prick it with a fork to keep bubbles from forming.

Add sugar to a saucepan.

Add cornstarch, and Jello to a saucepan.

Whisk together to avoid lumps.

Add water and combine.

Bring to a boil, stirring constantly.

Cook until the mixture begins to thicken.


Arrange berries in pre-cooked pie shell.

Aren’t they beautiful?

Pour cooled glaze over berries.

Chill and serve with whipped cream if desired. Enjoy!
