This recipe is one of our old standbys….meaning, when in doubt, it’s what I make. It’s simple and easy and great for a crowd. There are several different versions out there, but this is my family’s favorite because of one ingredient that other recipes don’t have: Ranch Dressing Mix. Another great thing about this recipe is that if you need to, after you brown the meat, you can put all the ingredients in the crockpot and just leave it for the day. So simple!
Taco Soup:
1 lb. ground beef or turkey (I use either very lean ground beef or ground turkey)
1 small-medium onion chopped
1 can Rotel tomatoes
1 large can petite diced tomatoes
2 cans Ranch style beans
1 can black beans
1 can white shoepeg corn
1 package taco seasoning
1 package Ranch dressing mix
Tortilla Chips
Shredded Cheese
Sour Cream
Saute’ onions in skillet. Add meat and brown. Pour tomatoes over and add seasonings. Add beans and corn. (Drain and rinse the black beans, but do not drain the Ranch style beans.) Stir and simmer until ready to serve. Serve over (or with) tortilla chips and top with cheese and sour cream!
