Last night, I found myself wandering the supermarket at supper time, absolutely clueless as to what I was going to feed my family. I wanted something easy and quick, but not processed or greasy. That’s when it me: we can have tacos tonight! So, I loaded up the buggy with ground turkey, salsa, taco seasoning and shells….and headed home.
In less than 30 minutes, we had a fresh, (somewhat) healthy meal that everyone enjoyed. Adding sour cream, romaine lettuce and cheese we had at home completed the meal perfectly.
If you’re crunched for time, give taco night a try. It’s really a one-dish meal so clean-up is even easy. And, there are easy and delicious ways to get veggies in as well. We used romaine lettuce because that’s what we had on hand, but often, I used baby spinach instead (chopped in strips just like lettuce)…and I’ve never had a kid complain.
That’s what worked for me this week…maybe it can work for you, too, sometime. Here’s the recipe:
Quick and Easy Tacos:
1 lb. ground beef or turkey
1/2 onion, chopped fine
1 package taco seasoning mix
1/3 cup water
Saute’ onion and meat. Brown thoroughly. Add taco seasoning and water and simmer until thickened.
Spoon into heated taco shells or tortillas and top with lettuce, spinach, cheese, sour cream, salsa, fresh tomatoes, black beans….whatever you like!
