Make-It-Yourself Monday: Baked Apple Spice Donuts

How about a “healthified” donut recipe today?  These little donuts are very tasty and really simple to make.  I used a mini donut maker that I found at Dirt Cheap for about $3, but I should think a donut pan in the oven would work as well (or maybe even a waffle iron).

Here’s what you need:

2 cups whole wheat flour

2 tsp baking powder

1 tsp baking soda

1 tsp. cinnamon

1/4 tsp. ground cloves

1/4 tsp. ground ginger

1/4 tsp. ground nutmeg

1/2 tsp. salt

2 large eggs

1 tbsp. egg whites

1 cup unsweetened applesauce

1/2 cup packed brown sugar

1/2 cup buttermilk or 1/2 cup milk with 2 tsp. of lemon juice or vinegar added

Here’s what you do:

Whisk together the first 8 ingredients and set aside.  Whisk eggs and egg whites then add applesauce, brown sugar and buttermilk and mix well.  Add to flour mixture and mix well.  Spoon into donut maker and cook according to manufacturer’s instructions.

Optional:  Mix about 1/2 cup powdered sugar with a tablespoon of milk to make a glaze.  Drizzle over donuts.

Makes 20 mini donuts.
